It is our winery’s flagship wine, the most special one, with extraordinary characteristics.
Hence we only make it in excellent vintages. It comes from vineyards that have been carefully selected over the years and which average more than 70 years of age. They have very low yields, but extraordinary quality. Vineyards and plots located in different places along the Ribera del Duero, on hill slopes, in different soils, at different altitudes and solar exposure, all contribute to the special complexity of this wine.
Our winemaker sets the harvest date based on technical and sensory controls; under his surveillance, the grapes are hand-picked at the vineyard, to select the bunches that will turn into this exceptional wine. Back at the cellar, the grapes follow a long, careful production process by gravity, with daily overpumpings, cold soak at 8ºC, controlled fermentation at maximum temperatures of 28ºC, and macerations lasting about 25 days. The result is a powerful wine, highly expressive and elegant.
Gran Resalte’s malolactic fermentation is carried out in fine grain new French oak barrels from the most prestigious cooperages, with daily bâttonages that increase the complexity, balance and blending of fruit with oak aromas.
Gran Resalte ages for no less than 24 months in oak. Throughout this ageing, we carefully control each of the barrels, to ensure the correct evolution of this exceptional wine during this extended period and its final harmony, elegance and unique personality.
