PRODUCTION AND AGEING:
The production included harvesting in crates, sorting on table, de-stemming, vatting requiring little pumping, alcoholic fermentation in wooden casks and malolactic fermentation in new French oak barrels. The ageing in casks was made over a period of 48 months with three rackings during such period
